You can develop your own projects in javascript, c#, java, php, python etc and this could be a software, a web application, a video game etc. You only need 5 high quality projects.

Then learn the skills such as javascript frameworks like react, angular, node which are very hot and also databases such as sql, nosql, postgre sql, mongodb. Also test driven development, object orientated programming, git, linux, agile scrum, kanban, winforms, azure, testing tools such as selenium, postman etc.

Also you can learn projects in various languages through these websites:

1) Udacity
2) Udemy
3) Lynda
4) Pluralsight
5) Treehouse
6) Zenva
7) Codeacademy
8) Free code camp

You can even use their projects as part of your portfolio on github.

Udacity has nano degree's in full stack web dev, android dev, vr deveopment, robotics, Ai which can take up to 3-6 months to complete.
 
Udacity is best for android development imo. Udemy for web development.But at the end it depends in which country you live. In Pakistan, the minimum requirement to get any job in IT or any other field is you must have a bachelors degree. Even if you have skills, the recruiters wont even consider you if you don't have the minimum degree requirement. But in contrast, the European countries or US etc, the value of skills are more than the degree which i think must be the criteria of recruitment in pakistan. Degree is important, but at the end skills matter the most.
