Just sharing my own list. Priority is given to those performances against quality attacks and that have a positive affect on result (match-winning or saving).
1. Azhar Mahmood 132 vs South Africa in 1998 - Against the strongest pace attack of the time, he shepherded the tail in unbelievable fashion.
2. Hanif Mohammad 337 vs West Indies in 1958 - Saved the test with the longest innings in test history, a true physical achievement.
3. Javed Mianded 102 vs West Indies in 1988 - In the second test, Miandad scored a fourth innings ton against Marshall and co that secured a draw and nearly a victory.
4. Saleem Malik 237 against Australia in 1994 - A double century achieved when following on to save the test against Warne at his peak.
5. Imran Khan 136 vs Australia in 1990 - His Adelaide century took Pakistan from a deficit hole to a match-winning position. True captain's knock.
6. Saeed Anwar 188 against India in 1999 - Carrying his bat with a counter-attacking innings in a low-scoring test.
7. Kamran Akmal 139 vs Indian in 2006 - Ultimate counter-attacking knock when coming in at 39-6.
8. Younis Khan 267 vs India in 2005 - Seminal knock of his career in a high stakes situation.
9. Zaheer Abbas 274 vs England in 1971 - Scoring an overseas doubleton in his second test.
10. Inzimam 92* against South Africa in 2006/7 in Port Elizabeth - Coming in at no.8 on a bowler's wicket to take Pakistan into the lead.

Inzimam 138* vs Bangladesh in 2002 - Great knock but poor attack
Asad Shafiq 137 vs Australia in 2016 - Nearly chased the impossible but fell short sadly.
Imran Khan 123 vs West Indies in 1980 - A match-saving knock against the best attack of all-time, but dont know much about the innings itself or match reports.
Ijaz Ahmed 137 vs Australia in 1995 - Took apart Warne and got Pakistan a rare victory in Australia. Nearly made it on the list.
