Questions for UAE curators, how can a day 3 pitch be tougher than a day 5 pitch

Have seen this many times in the UAE where the pitch completely slows up and the spin vanishes. Shouldn't batting be much tougher on Day 4 and 5 in comparison to Day 3? 100 overs in the final innings should be more than enough to get rid of a 4th innings team.

The PCB isn't really getting much home advantage on these grounds. There is no way Khawaja will play reverse sweeps so fearlessly against an Indian leggie in India

A considerable amount of Asian pitches slow down as match progresses. Batsmen will then have time to adjust. Just the nature
 
Why it's a surprise I don't understand? UAE wickets are built on soft base & low % of clay - it gets slower & lower by the day, but don't break like Indian or BD wickets. First 2 days, despite being slow & low, ball reasonably comes on to bat & batsman can survive for long for a 2.7 like RR. By the last days, it's get extreme slow & low for spinners to operate unless batsmen go crazy & try to score at 2.7+ rate. Couple of years back WIN survived 100+ overs on day 5 here - this current WIN!!!

One can check stats - most UAE Tests are won for a collapse in 3rd or 4th day, when the wicket is probably toughest for the little carry & pace that it leaves.
 
Looks like the same story for the Abu Dhabi wicket. The PCB seriously needs to hold these curators to account and needs to threaten the UAE authorities that if they don't produce wickets with assistance for the spinners on Day 4 and 5 then the PCB is going to search for a new home.
