You can disable the blue ticks so that others don’t find out if you have read their messages.

It is quite common for people to remove each other from contacts after a breakup.

Not saying the screenshots are 100% genuine, but these are not strong enough reasons to doubt her.

1. When you reply from notification, it doesn't shows blue but since you read the content from notification, you can reply.

2. She probably have saved the number as the name since she probably won't want to write his name in her contact list. Or she probably could delete the number after initial ugly fight.
