Why does highway dhaba food not taste like dhaba food anymore?

The restauraization of Highway Dhabas has to be among the biggest calamities of our lifetime.
It’s a massacre happening right before our eyes and we are doing nothing about it.
 
Dhabas traditionally catered only to truck drivers. Now with improved roads, more and more people are choosing to travel long distances by car and bus. So the dhabas have had to evolve into restuarants with all the hygiene and other requirements, to be able to cater to this new class of upwardly mobile road travellers.
I don't think the quality of the food has fallen, at least in most dhabas I have eaten in. In fact there have been improvements with more items on the menu etc.

I don’t know the Parantha doesn’t taste the same anymore, neither does Daal.
 
I traveled a few times in the last couple of years from Faisalabad to Sargodha and tried Dhaba food 4-5 times. It was pretty good.

I think Pakistani dhabas haven’t modernized as of yet. Have seen people going to dhabas in the northern areas as well. Looked amazing, yet still had that rustic “hole in the wall” vibe still.

India has to stop copying the west and commercializing everything.

Most of the famous dhabas on the Rawalpindi to Lahore GT road have modernised as have the ones in Murree. These were the popular ones.

With fast growing tourism and economic prosperity in the North, similar trends will follow. I appreciate the prosperity for the sake of the locals but will miss the true authenticity.

Perhaps in India the chaiwala is nervous at the threat from Dhabawalas and has neutralised them.
