Pakistan veg and egg recipes

Hello,

I like to cook during the weekends for my family and a bit tired of the usual indian fares. Can you share some Pak veg & egg dishes you ate when growing up? Youtube seems to be full of "kadai veg" variants if i lookup "Pakistani veg dishes", so looking for some more specialist recommendations.
 
I dont cook but there imo the King of Pakistani veg dishes is Karela and not with Keema, on its own, with plenty of corriander.

Its a shame as its not the menu in most Pakistani restaurants here.
 
Egg fried rice isn’t from Pakistan originally, but the best egg fried rice I’ve had in my life was from this Chinese restaurant in Karachi that has been running since the 70s.

So imma go ahead and recommend making egg fried rice lol.

What did you have with it? Surely you cant eat this on its own.

Good to have a family member like you ! Some Pakistani veg & egg dishes that i didn't grow up eating but tried are ''Anda Curry'' which is like hard boiled eggs in tomato and onion curry, people add potatoes in it as well and have it with white rice. Also another dish with egg as the main character is scrambled eggs with tomatoes, bell peppers and onions called ''Anda Ghotala'' -- tbh have not tried this one
 
This is like asking Rahul Dravid how to slog sweep :D.

I might not be of much help but they make this mooli/white radish curry which is exceptionally good. It's not an easy vegetable to cook but they've mastered it. Remember my friend saying it’s a traditional food of theirs.

Apparently you can eat egg fried rice on its own I recently learnt.

Used to think it played a support role only.

But anyway, I had it with American chopsuey which is the best dish I’ve ever had. I know all this sounds like hyperbole first the rice now the chopsuey, but that is a GOAT level restaurant. It’s Kowloon on Tariq Road in Karachi if you ever get to go.

Big portions and high quality.
 
Not sure you can count it as Pakistani, but when I was a teenager visited my aunt in Islamabad and she just served up fried egg and tomato with toast and it's honestly still one of my favourite breakfasts. No fancy spices, just salt and pepper. I think it's probably based on middle eastern/Turkish shakshuka recipes which do include a lot more spices, but any variation of this is good. Not really suitable for a main meal though.
 
If you want strictly veg then the tried and tested channa puri is hard to beat. I'd eat that any time of day if it's done right.
