Reminds me of how I used to play football in -5C (when I was in high school). I used to play snow football during lunch breaks.

The yogurt I ate is called "khirsha dahi/doi". It is a unique yogurt originated from northern Bangladesh. It is creamier than usual yogurt. :inti

Here is from ChatGPT:

Khirsha (ক্ষীরসা / খিরসা) — often called Khirsha Doi or Bogura Khirsha Doi — is a traditional sweet dairy dessert from northern Bangladesh, particularly associated with the Sherpur area of the Bogra district. It’s part of the rich Bengali mishti doi (sweetened yogurt) tradition, but with its own distinctive texture and preparation style tied to local culinary heritage.

🍯 What It Is

  • Sweet fermented dairy dessert: It is a type of doi (yogurt/curd) made from milk that’s thickened and sweetened — often with sugar or jaggery — then fermented to develop flavor.
  • Rich, creamy, custardy texture: Khirsha tends to be thicker and richer than regular sweet yogurt (mishti doi), sometimes described as almost custard-like and very creamy.

🌍 Origin & Cultural Significance

  • Bogra, Bangladesh: It’s a regional specialty from the Sherpur area in Bogra district, famed for its quality and taste.
  • Part of local festive cuisine: Khirsha is enjoyed at festivals, family gatherings, weddings, and as a sweet treat, much like other regional desserts.
  • Cultural heritage: Traditional producers use age-old methods passed through generations, contributing to its iconic status locally.

🥛 How It’s Made

The classic preparation involves:
  1. Boiling milk down until it’s thick and concentrated.
  2. Sweetening with sugar or jaggery.
  3. Pouring into clay or earthenware pots (which help with setting and subtle flavor development).
  4. Letting it ferment or set until it becomes a sweet, creamy dessert-like yogurt.

🍧 Taste & Texture

  • Texture: Very creamy, thick, and rich — often more so than everyday yogurt.
  • Flavor: Sweet with potentially slight caramel notes (from the reduced milk and sugar/jaggery).
  • Serving: Usually enjoyed chilled, either on its own or with other Bengali sweets.
