A lot of Indian cricket fans saying they don’t back their team to chase anything above 200 or so but why? The pitch seems to have flattened out and even Kuldeep managed to play more than a 100 balls. Surely 300+ is needed for England to have a chance here?

Shubman scored only on flat pitches.
As soon as ball turned, he has struggled
Yashaswi also scored both the double centuries on a flat pitches.
This pitch has doesn't have any demons as we saw with kuldeep who faced 100+ balls without any trouble.
It's just bumrah's brilliance who actually made this series a contest.

I hope the names you mentioned (minus Kohli) always stay away from the team. They have been great (especially Pujara) of the team, but their time is over.India is playing without Kohli, KL Rahul, Pujara, Rahane, Shreyas and the batting line up is very inexperienced. Rohit Sharma is the most experienced batsman and he himself only has 57 tests. The team includes youngsters like Jaiswal & Gill and debutants like Sarfaraz, Jurel and Patidar. They are doing really well to compete against a team with experienced players like Anderson, Root, Bairstow, Stokes et all.
I actually thought it was a mistake not to recall one of Rahane or Pujara to give some ballast to the middle order once Kohli and Rahul couldn't play but it's turned out well. Sarfaraz has shown up, Jurel has emerged and we more or less know that Patidar probably doesn't have what it takes.I hope the names you mentioned (minus Kohli) always stay away from the team. Generative AI in pitch to turn flat when India bats and turn into a spitting cobra when England bats.
If you look at the stat Ashwin turned the ball the least among all bowlers from both sides in the 2nd innings. He didn't try to turn even one ball. He just changes grip when he bowls new ball and under cuts. None of the Ashwin's ball was scooting or turning big or even bouncing. He simply beat them in flight. Not a single wicket from Ashwin has anything to do with pitch. JUst that ENglish batsmen when they can't sweep, reverse sweep don't have many answer. Yadav ofcourse turns the ball anywhere being a wristie. He was grossly under-utilized in the first innings. Otherwise he would have done more damage when India allowed the game to drift.The pitch has changed dramatically across days. The first day of the match the ball was seaming and spinning everywhere for the first hour and then it went so flat that your bowlers were getting hammered by Ollie Robinson. During the second day, your middle order got demolished but England could not even get Kuldeep Yadav out.
Today the pitch actually broke down later in the day but Ashwin + Jadeja + Yadav are obviously way better than Bashir, Hartley, and Root to take advantage of that.
